- Vanilla Almond Milk -

Yield: ~64 oz.

Ingredients

 

2 c. raw, soaked almonds

5 c. water

3 c. coconut water

6-8 pitted, soaked dates

2 tsp. pure vanilla extract

1/2 tsp. cinnamon

pinch of salt

 

Directions

 

1. Place almonds & dates in separate bowls & cover with water. Soak overnight or at least 2 hours.

2. Drain the almonds & rinse of over sink. Use a slotted spoon to takes dates out of water.

3. Place almonds & dates into a blender or food processor with water.

3. Blend on high for about 1 minute.

4. Slowly pour into a nut milk bag over a large bowl. Carefully work mixture towards the bottom of the bag to strain milk out. 

5. Add coconut water & vanilla to large bowl, then stir to combine. 

5. Rinse the blender/food processor out & pour the milk back in. Add cinnamon & pinch of salt and blend on low to combine.

6. Pour milk into a cup to serve immediately or into a sealed container to store in the fridge for up to 5 days.
