- Crock-Pot Sweet Potato Chili -

Serves: 6-8

Ingredients

 

1 carton of low-sodium vegetable broth (about 4 c.)

1 15.5 oz can pinto beans, drained

1 14.4 oz can diced tomatoes, drained

1/2 c. dry quinoa

2 small/medium sweet potatoes, peeled & diced

1 large red onion, diced

4 cloves of garlic, minced (about 2 tsp.)

1/4 c. louisiana hot sauce

1 TB chili powder

1 TB unsweetened cocoa powder

1 tsp. paprika

1 tsp. cinnamon

1 tsp. cumin

1/4 tsp. salt

2 TB lemon juice

 

Toppings

 

cheese

avocado

sour cream

 

 

Directions

 

1. Prepare all ingredients & toss into crock pot.

2. Cook in crock pot on high for at least 3 hours, when sweet potatos are tender and chili has thickened. 

3. Serve warm with favorite toppings over hominy, with tortilla chips, or as is.
