- Cinnamon Granola -

Serves: 24 (1/2 cup servings)

Ingredients

 

3 c. old-fashioned rolled oats
3 c. buckwheat
1 1/4 c. mixed nuts, chopped ( I used almonds, pecans, & walnuts)
1/3 c. flaxseeds

1/4 c. chia seeds
3/4 tsp. Himalayan sea salt
1 T. ground cinnamon
3/4 c. egg whites (approximately 3 eggs)

1/3 c. coconut oil

3/4 c. sweetener of choice (I rotate between honey & brown rice syrup)*
 

Directions

 

1. Preheat oven to lowest temperature setting

2. In a large bowl combine oats, buckwheat, chopped nuts, seeds, and spices. 

3. Add in egg whites at mix with a spatula or large wooden spoon.

4. Combine oil & sweetener in a microwave safe bowl & heat for 20-30 seconds. 

5. Pour oil & sweetener over ingredients & mix until well combined. 

6. Place parchment paper over two baking sheets and divide granola between the two. 

7. Bake in oven for 3 hours, or until crunchy to your preference.

8. Remove from oven & let it cool. Then pour into an airtight container to store.   

*Feel free to add more sweetener to your taste.
