- Black Bean Salsa -

Serves: 12-14

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Ingredients

 

3 colored peppers, diced
1/2 c. red onion
2 c. corn (or one 16 oz. can)
2 c. black beans (or one 16 oz. can)
1 bunch cilantro, chopped
1/2 c Italian dressing
1 tsp. lime juice
1 clove garlic, minced (about 1/2 tsp.)
salt & pepper, to taste

 

Directions

 

1. Prepare all the veggies.

2. Mix all ingredients together.

3. Serve as a dip or add to a taco or burrito with your favorite fillings.
